Sprinkle the pancetta well with salt, pepper, paprika and a little garlic powder. Place in a pan with a little olive oil and a little water. Cover with aluminum foil and let the pancetta cook at 170 degrees for about 1 hour and 45 minutes, checking every half hour if you need to add a little water. Put about 1 cup of honey in a bowl (or a little less if you don't want your sauce too sweet) and dilute with a little water. Add the mustard (add a spicy mustard for a stronger taste) and mix well until you have a homogeneous mixture. After the cooking time has passed, uncover the pancetta from the aluminum foil, pour the honey-mustard sauce over it and leave for another 15 minutes or so until the sauce caramelizes. Serve on a large platter whole or cut into smaller pieces. Serve with baked potatoes.
